Simple Slow Cooker White Chicken Chili Recipe
This white chicken chili recipe is one of our all time favorites. It is so easy to put together and makes a great alternative to traditional chili. I love to prepare a pot during cooler weather to enjoy when we’re done with a busy day out and about. The mix of spices blended with creaminess and topped with a little fresh cilantro and lime is just perfection!

White Chicken Chili Recipe
Ingredients:
- 1.5 lbs chicken breasts
- 15 oz Cannellini Beans (drained)
- 1 bag frozen corn or 1 8.75 oz can whole kernel corn (drained well)
- 30 oz chicken broth
- 4 oz can fire roasted green chiles
- 1 packet taco seasoning
- 1/2 block cream cheese
White Chicken Chili Topping Ideas:
- sour cream or greek yogurt
- cilantro
- fresh lime juice
- avocado slices
- shredded cheese
- diced jalapeño
- crushed tortilla or corn chips
Instructions:
Add the chicken, beans, corn, chicken broth, green chiles, taco seasoning, and cream cheese to the slow cooker; stir.
Place lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 8 hours.
When the cooking time is done, shred the chicken with two forks, and add back to soup.


How to thicken this White Chicken Chili recipe
Sometimes this recipe can turn out a little more watery than desired. There is a quick fix to thicken it up in a jiffy! Simply make up a cornstarch slurry of 1Tbsp cornstarch stirred thoroughly into cold water until lumps disappear. Stir slurry into chili and allow to simmer another 7-10 minutes until thickened. If you do not have cornstarch, you may use flour, however take care to make sure it is completely dissolved in water before adding.
Storing White Chicken Chili
If you’re like me, you’re going to want to enjoy this chili for leftovers! I like to make a large batch and freeze some for a quick lunch or dinner later. Simply ladle into an airtight container and pop in freezer. You can store in the refrigerator in an airtight container for up to 5 days (if it lasts that long).
