Easy Crockpot Tortellini Soup with Sausage

This simple tortellini soup with sausage is creamy and delicious. It calls for just six ingredients that you can practically dump in a slow cooker and walk away from. Hours later you will return to a mouthwatering and filling soup that will warm your belly on cool fall and winter evenings. Pack leftovers in a Thermos for lunch the following day!

Creamy Tortellini & Sausage Soup Recipe

Ingredients

  • 1 lb. Italian sausage
  • 2 (15oz) cans Italian diced tomatoes
  • 3 cups spinach, fresh
  • 4 cups chicken broth or vegetable broth
  • 1 (20oz) bag cheese tortellini, frozen
  • 8 oz cream cheese
  • Salt & pepper

Directions

Brown sausage in a skillet until cooked through.  Add sausage, tomatoes, chicken broth, and cream cheese to slow cooker. Cook on high for 3-4 hours or low 7-8 hours. About 30 minutes prior to serving, add the cheese tortellini and spinach. Season to taste.

Serve topped with a little grated parmesan and crusty french bread or garlic bread.

Variation Ideas

  • Meat: You could substitute turkey sausage, cubed chicken or ground beef for the Italian sausage if desired.
  • Cream Cheese: heavy cream could be subbed or you could leave the cream cheese out completely for a dairy free version.
  • Dairy-free: trade the cheese tortellini for a regular pasta like bowtie or penne. You can use almond milk for a thickener. It will not be the same thickness and the taste will change but this will lead to a dairy-free tortellini soup.
  • Vegetables: add in chunks of potatoes, diced carrots, mushrooms, zucchini or even bell peppers.
  • Tortellini: tortellini comes in a variety of flavors/ fillings or you could use ravioli!
  • Chicken broth: vegetable broth can be subbed to make a vegetarian version.
  • Diced Tomatoes: tomato sauce will also work to thicken and add rich flavor or try diced tomatoes with added basil or fire-roasted.
  • Kale: switch it out for spinach if you prefer.
  • Seasoning: add Italian seasoning, or basil and oregano for extra flavor.
  • Gluten-free: omit regular tortellini pasta and substitute it with any gluten-free pasta.
