Don’t you just love a great dip? There are so many options for dipping your favorite chips or crackers, but this crockpot corn dip recipe is, hands-down, the best party dip you’ll ever try! It’s great for watching the game at home or packing up for a tailgate!

Crockpot Corn Dip Recipe
- 2 cans whole kernel corn (drained)
- 1 can Rotel tomatoes
- 1 1/2 cup shredded Sharp cheddar cheese
- 1 block cream cheese cubed
- 1 lime half juiced, half cut into wedges
- Crackers or Chips
- Pickled jalapeños – use more or less according to the spiciness you prefer
- Cilantro – or parsley
- Queso Fresco
Place the corn, Rotel, cheddar cheese and *cream cheese in the slow cooker. Turn on low for 2 hours. Stir occasionally. Remove and sprinkle with cilantro, queso fresco, pickled jalapeños and a squeeze of lime. Serve with your choice of crackers and/or chips.
