Easy Mexican Pizza Recipe (Better than Taco Bell)

Mexican pizza is a mash up of tostadas and pizza, best known as a popular menu item at Taco Bell. While it’s fun to grab the fast food option once in awhile, this easy recipe is healthier and tastier. Set up an assembly line so your family can customize their Mexican pizzas to their own tastes and have fun doing it.

Mexican Pizza Recipe

Ingredients:

  • 1/2 lb ground beef
  • 1/2 package Taco Seasoning Mix
  • 2 tbsp water
  • 8 white corn tortillas
  • 16 oz Refried Beans
  • 1/3 cup enchilada sauce
  • 1/3 cup thick and chunky salsa
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup diced tomatoes

    Optional Topping Ideas:
  • sliced black olives
  • chopped green onions
  • sour cream
  • sliced jalapeños
  • sliced avocado
  • corn salsa
  • cilantro
  • Cojita cheese crumbles

Instructions:

  1. Brown ground beef in a skillet. Drain excess fat.
  2. Add water and taco seasoning. Mix well.
  3. Simmer on low for 8-10 mins.
  4. Preheat oven to 400 degrees.
  5. Spread 1-2 tablespoons of beans on 4 tortillas.
  6. Top beans with the seasoned ground beef mixture.
  7. Top each of these with the remaining tortillas.
  8. Place under broiler for about 2 minutes, watching carefully so they do not burn.
  9. Top these tortillas with a blend of enchilada sauce and salsa.
  10. Add shredded cheese.
  11. Bake in oven 5-7 minutes, or until cheese is completely melted.
  12. Top with tomatoes, olives, green onion or other desired toppings.

Helpful tips for making Mexican Pizza:

  • When browning ground beef, crumble well so the layers will stack evenly and stay stuck together.
  • Be careful when choosing tortillas. You want to get taco sized ones, not burrito sized which are too big.
  • Use caution when adding salsa and enchilada sauce. Too much will make your pizzas soggy and they may fall apart.

Can you substitute chicken on Mexican Pizza?

Sure! Substitute beef with ground turkey, chicken or shredded chicken. To season chicken, just sauté in a little water and taco seasoning.

Can you fry the tortillas?

Tortillas can be fried in oil until crisp and then layered on pizza. Skip the broiling stage if you do this as tortillas will already be crisp. You can also crisp your tortillas in an air fryer it you have one!
