Best (Easy) Coffee Cake Recipe EVER
This is the BEST coffee cake and looks like you spent hours in the kitchen, but it’s called EASY coffee cake for a reason! It starts with a box of yellow cake mix and a package of vanilla instant pudding! Yep. Yellow cake mix! This was originally Mia’s paternal grandmother’s recipe, which I adopted over 15 years ago. It’s a hit in my family and was my grandfather’s favorite. It makes me think of him whenever I make it! I hope you and your family also love this easy coffee cake recipe!
Best Coffee Cake Ingredients
For the Cake
- 1 (15.25 ounce) box yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 eggs
- 1 cup sour cream
- ½ cup vegetable oil
For the Cinnamon Sugar Mixture
- 1/2 cup sugar
- 1 teaspoon cinnamon
For the Glaze
- 1 cup confectioners’ sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
Combine cake mix, pudding mix, oil, sour cream, and eggs. Using a stand mixer or electric mixer, beat for 10 mins. In another bowl, combine cinnamon & sugar, set aside. Spread half the cake batter into a Bundt pan. Sprinkle the half of the cinnamon sugar mixture. Repeat with batter and cinnamon sugar mixture, then swirl/marble through with a knife. Bake 60 mins at 350°. Mix confectioners sugar, milk & vanilla. Drizzle over warm coffee cake. Enjoy!
