Quick and Easy Healthy Lunch Ideas


Looking for some great, easy lunch ideas that are healthy and quick to prepare? If you have followed me on social media for any amount of time, you may now that I am passionate about meal prep. I love to spend Sunday afternoons preparing meals for the week so I don’t have to think about what to make.

In addition to taking the guesswork out of what to eat for meals during the week, its really convenient to have meals ready to grab and go. The best bonus though, is that having these ready to go HEALTHY meals allows me to eat healthier and not resort to picking up fast food. Today I am sharing some of my favorite easy lunch ideas.

Easy Lunch Ideas

All of these easy lunches take just minutes to assemble. I have a stash of divided containers that I use. Then I just keep in my refrigerator for easy grab and go.

5 Minute Protein Box

This bento box style lunch is packed with protein.

  • hard boiled egg
  • pouch of Justin’s classic Almond Butter ( but you could include peanut butter or any nut butter)
  • Babybel cheese
  • a handful of crackers
  • sliced cucumber
  • sliced strawberries

Fruit & Veggie Lunch Box

Vegans can leave out the cheese to make this a totally veggies box. To add extra protein you could add nut butter or a few nuts.

  • grapes

  • celery sticks

Have a Heart Lunch Box

I shared this quick and easy lunch box on my Instagram around Valentine’s Day. It was easy to cut cheese slices with a heart shaped cookie cutter to make them extra cute. You could do this with any shape for your kids or friends. Check out my TikTok for the skewers and other fun food vids.

5 Minute Lunch Bowl

Sticking with the heart theme I put this bowl together with some leftover heart cookies and cheese.

Mediterranean Pasta Salad

I love a good pasta salad and these take mere minutes to prepare. When ready to eat, gently shake the jar to coat with dressing.

  • Greek dressing

  • diced tomatoes
  • chopped yellow bell pepper
  • diced cucumber
  • chopped kalamata olives

Asian Chicken Salad

Another 5 minute lunch idea is this delicious asian chicken salad in a jar. Prep in advance, gently shake jar to coat with dressing and top with crispy noodles.

  • Asian dressing
  • edamame
  • shredded cabbage
  • grated carrots
  • chopped lettuce

Chicken Salad Lunch Box

If you love chicken salad as much as I do, then this easy lunch is a great option. Just 5 minutes to pack a weeks’ worth of lunches.

Chicken Salad:

  • shredded rotisserie chicken
  • equal parts plain greek yogurt & mayonnaise
  • chopped walnuts
  • halved grapes
  • chopped celery
  • salt & pepper to taste
    Mix all ingredients and spoon into divided containers on a lettuce leaf.
