Easy No-Bake Strawberry Shortbread Cheesecake Parfait
This strawberry shortbread parfait is a combination of things I just love! When strawberries are in season, my Mom and I can’t get enough so when I had the opportunity to work with a shortbread cookie brand I knew what I wanted to make!
These parfaits are so easy to put together and the cheesecake filling is creamy, tangy and delicious. Plus, it requires no baking so its a great dessert to put together even in hot weather when you don’t want to heat up the kitchen.

Easy Strawberry Shortbread Cheesecake Parfaits
INGREDIENTS
Cheesecake Filling:
- 1 (8 oz package) cream cheese, softened.
- 1 (14 oz can) sweetened condensed milk
- 1/3 cup fresh lemon juice
- 2 teaspoon vanilla bean paste
- Pinch salt
Mix in a medium size bowl, using hand mixer until light and fluffy.
- Shortbread crumble :
- 1 package Walkers Shortbread cookies
- 1 tbsp butter (melted)
Place cookies in a plastic bag and crush using a mallet or rolling pin. Crush until consistency of granola. Combine and Mix until evenly coated with melted butter.
- Diced strawberries
To assemble Strawberry parfait:
Layer ingredients in parfait dishes, cocktail glasses or Weck jars (as seen) starting with crumble and ending with strawberries. Top with whipped cream if desired. Serve immediately.
