Simple Crock-Pot Broccoli Cheddar Soup
If you love the broccoli cheddar soup at Panera, you’re going to love this easy recipe for the crock-pot! It produces a rich, creamy soup loaded with bits of broccoli, carrot and onion and bursting with flavor. Best of all, the prep is simple and ingredients can be tossed into your slow cooker for a tasty meal at the end of a long day.

Broccoli Cheddar Soup Recipe
Ingredients
- 1/2 lb or broccoli, chopped
- 2 cups chicken stock or broth
- 1/4 cup melted butter
- 1/2 medium onion, chopped
- 1 cup carrot, julienned
- 1/4 cup flour
- 2 cups half and half
- 8 oz. sharp cheddar cheese, grated
- 1/2 block cream cheese
- Salt & Pepper to taste
Directions
Place broccoli, onion and carrots into crock-pot and cover with chicken stock and add salt and pepper. Cook on low for 4 hours. After 4 hours, turn slow cooker on high.
In a small sauce pan on stove, melt butter. Slowly whisk in flour. Remove 1 cup of liquid from slow cooker and add to sauce pan VERY slowly, being sure to whisk constantly. Slowly whisky in half and half.
Add shredded cheese a bit at a time to the roux mixture and stir until until totally melted and combined. Add cheese sauce mixture to crock-pot and add creamy cheese. Stir to combine and simmer until cream cheese in completely melted and combined.
Serving Ideas
While this broccoli cheese soup is delicious on its own, you could easy add shredded chicken to up the protein factor. Simple stir it into the soup at the end so it get swarm or you can add to the stop.
We like to added even more grated cheese to the top of our bowls of soup and accompany it with some good crusty bread but this would be fabulous served in a bread bowl too!
Everything is better with bacon, including broccoli cheddar soup! Sprinkle on some crisp, shopped bacon for a kick of additional flavor.
