Feel Better Chicken Noodle Soup Recipe

‘Tis the season for feeling under the weather. My own family has been fighting off a cold for over a week now so I made us a batch of this ‘feel better’ chicken noodle soup. The secret cold-fighting ingredient? Ginger! Here’s the recipe. I hope you love it and it helps you feel better too.

Feel Better Chicken Noodle Soup Recipe

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 3 Carrots
  • 2 Celery stalks 
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 Onion (small)
  • 5 cups Chicken stock
  • Juice of 1 lemon, freshly squeezed
  • 3/4 cup Ditalini pasta
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp Olive oil

Directions

Heat 1 tablespoon olive oil in a large stockpot over medium heat. 

Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. 

Stir in garlic, ginger until fragrant, about 1-2 minutes.

Stir in chicken stock, and 1 cup water. Add chicken and bring to boil; reduce heat and simmer, covered, until the chicken is cooked through, about 11-13 minutes. 

Remove chicken and shred.

Stir in pasta and cook until Al dente, about 9 minutes. 

Add chicken and lemon juice; season with salt and pepper, to taste.

Serve immediately. Enjoy!
