Melt chocolate chips until completely melted and smooth.
Microwave Oven: Place chocolate chips into a microwave safe bowl. Microwave at 50% power for 1 minute, then stir well. Continue to microwave for 15 to 30 second intervals, stirring well after each interval, until smooth.
Double Boiler: Place chopped chocolate chips in the double boiler over hot, not boiling, water. Stir until smooth.
Spoon chocolate into mold until approximately 1/3 full.
Add graham cracker square.
Spoon or pipe (add fluff to zip lock bag and cut off one corner) marshmallow fluff into center.
Press second graham cracker on top.
Cover sandwich with melted chocolate and fill to top.
Tap mold on counter top to level chocolate and remove air bubbles.
Allow to cool and harden. Do not place in freezer as chocolate may crack.
Once hardened, remove from molds and drizzle with white (or desired color) candy melts. (Melt as directed above and add to zip lock bag with corner cut off to drizzle) and sprinkle with your choice of sprinkles.
Serve and watch the smiles!
