Apricot Oat Bars Recipe
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 cup light brown sugar, packed
- 1 jar apricot jam or preserves (13 oz)
- 8 dried apricots, chopped into small pieces
- 1 teaspoon ground cinnamon
- 3/4 teaspoon fine sea salt
- 3/4 teaspoon baking soda
- 1 3/4 cups old-fashioned rolled oats
- 1 cup coarsely chopped walnuts
- 1/2 sticks unsalted butter, melted
- 1 large egg, beaten
- 1 tablespoon vanilla bean paste

Instructions:
- Preheat and Prepare: Preheat your oven to 350°F. Spray a 9 x 13 x 2-inch metal baking dish with vegetable oil. Line the bottom and sides of the pan with parchment paper, then spray the parchment with vegetable oil.
- Apricot Filling: In a small bowl, combine the apricot jam and chopped dried apricots. Mix well to create a luscious apricot filling.
- Prepare the Crust: In a large bowl, whisk together the flour, light brown sugar, ground cinnamon, salt, and baking soda. Stir in the old-fashioned rolled oats and coarsely chopped walnuts. Add the melted butter, beaten egg, and vanilla bean paste. Mix until all ingredients are well incorporated.
- Assemble the Bars: Using a spatula or measuring cup, press half of the crust mixture lightly onto the bottom of the prepared pan. Spread the apricot filling evenly over the crust. Cover the filling with the remaining crust mixture.
- Bake to Perfection: Bake for 30 to 35 minutes or until the top is light golden. Allow the bars to cool in the pan for 30 minutes to 1 hour.
- Cut and Store: Once cooled, cut the bars into desired sizes. Store them in an airtight container for up to 3 days, although they are likely to disappear quickly!
